Christopher Trotter is Fife's Food Ambassador and is a passionate exponent of fresh food in season from Scotland. He has worked in Michelin starred restaurants in France and England as well as in Switzerland before returning to his own country to run a hotel and latterly Scotland's Larder his own restaurant food shop and demonstration facility. The presentation will be about the wonders of food combinations and how science works in cooking – ""Cooking to me is a combination of science and art! Colours and textures only work when the science does! Why does an egg and oil combined form some of the most sublime sauces ever? Why does milk set in to yogurt? And what makes bread rise?""
